Mandarin and Chicken Salad
Yields 4 servings
Ingredients
1 cup Cooked Diced Chicken
1 cup Cholesterol Free Mayonnaise
1/4 cup Canned Pineapple Chunks
1/4 cup Canned Mandarin Oranges
1/4 cup Diced Celery
1/4 cup Diced Green Onion
1/4 cup Pineapple Juice
1/4 cup Toasted Almonds
1 tbsp Chopped parsley
1 tsp Sugar
Preparation
Thin mayonnaise with pineapple juice and add sugar and parsley.
Combine pineapple, mandarin, celery, onion and chicken with mayonnaise – reserving 4 mandarin segments.
Serve mixture on desired lettuce leaves and garnish with almond and mandarins.
