Conch Fritters
Ingredients
6 Large Conchs
3 Large Fresh Tomatoes
3 Hot Peppers (Goat or Bird)
2 Medium Onions
1 Medium Sweet Pepper
3 1/2 cups Flour
1 cup Water
5 tsp Baking Powder
1/2 tsp Thyme
To Taste Salt
Preparation
Grind all ingredients in meat grinder. Add flour and baking powder. Fry in hot fat.
SAUCE
Ingredients
1/2 cup Mayonnaise
1/4 cup Ketchup
1/4 cup Hot Sauce
1 tbsp Pernod
Preparation
Mix all well and serve on the side of Conch Fritters.
