Sweet Amaretti Gnocchi

Ingredients

1 Egg

3 oz All Purpose Flour

2 oz Granulated Sugar

1/2 cup Amaretti Cookies finely ground

1/2 cup Confectioners Sugar

11/2 tbsp Mascarpone Cheese

1/2 tsp Salt

Preparation

For the gnocchi, preheat a fryer to 350 degrees. In a medium bowl, combine the egg, sugar and mascarpone and whisk until smooth.

Add the flour, cookie crumbs and salt and mix until combined. Transfer the dough to a flat work surface and roll into 1/2 inch strips. Using a sharp knife cut into 1/2 inch pieces. Press each strip onto a wooden butter paddle to shape and place on a parchment-lined sheet pan. Fry until golden brown in color; remove from the heat and place on a paper towel-lined sheet pan to drain.

Roll in Confectioners' sugar and set aside, keeping warm.

Serve with fresh raspberry sauce.
