Goat Cheese Gnocchi
Ingredients
2 cups Pastry Flour
1 cup Curd Goat Cheese
1/2 cup Ricotta Cheese
1/4 cup Clarified Butter
2 Eggs
Preparation
In a medium bowl combine the goat curd, ricotta cheese and eggs and mix to combine. Add 11/2 cups of pastry flour and mix. Transfer the dough to a lightly floured work surface, add the remaining flour and knead until smooth.
Divide the dough into six pieces and roll into long 1/4 inch round strips. Using a sharp knife cut into 1/2 inch pieces and transfer to a parchment lined sheet pan. Cover with a dry cloth and set aside in the refrigerator.
To finish the gnocchi, bring a saucepan of salted water to a boil. Add the gnocchi and simmer until they rise to the top (about 1 minute). Remove from the heat and strain.
In a large saucepan, heat the clarified butter over medium heat. Add the gnocchi and sauté until golden brown (about 4 minutes).
