Parisienne Gnocchi

Ingredients

3 Eggs

7 oz Whole Milk

4 1/4 oz All-Purpose flour, sifted

3 oz Unsalted butter

2 oz Parmesan Cheese, finely grated

To taste Salt

To taste Grated Nutmeg

Preparation

For the gnocchi, in a medium saucepan over medium heat, bring the milk and butter to a boil, reduce the heat, and maintain at a simmer. Add the flour and stir until a dough forms, pulling away from the sides of the pan. Add the cheese, stir to combine, and season.

Remove from the heat, transfer to a medium bowl, and add the eggs one at a time, stirring between each addition until well combined. Transfer the dough to a pastry bag fitted with a 1/4 inch round tip and set aside.

Bring a saucepan of salted water to a boil. Pipe the dough into 1/2 inch pieces directly into the saucepan. Simmer until the gnocchi rise to the top. Remove from the heat, strain, and reserve in an ice bath.
