Lamb Tagine with Artichoke

Yields 10 servings
Ingredients
10 Lamb Chops
2 Onions sliced
2 Tomatoes Chopped
6 Artichoke Hearts quartered
2 oz Oil
1/4 cup Chopped Parsley
1 tsp Salt
1/2 tsp Pepper
1/2 tsp Ginger - grated
1/4 tsp Cinnamon
1/4 tsp Saffron or Turmeric
Preparation
In a heavy pot, brown chops in hot oil then remove and reserve. Add onions to oil and brown. Reduce heat.
Add in tomatoes, parsley, saffron, salt, pepper and cinnamon; simmer 15 minutes. Add Chops back in; simmer 4-5 minutes and serve.
