Roasted Pineapple with Rum Sauce

Roasted Pinapple
Ingredients

1 Pineapple, peeled and halved

2 oz Brown Sugar (soft)

1 oz Rum

1 oz Butter

Preparation

Combine rum, butter and brown sugar. Rub onto pineapples well until completely coated. Roast in a sauté pan until golden brown.

Sauce
Ingredients

 Juice from Roasted Pineapple

1 oz Butter

1 oz Rum

1 oz Brown Sugar

Pinch Allspice

For sauce, melt butter in pan. Add sugar and caramelize. Flambe with rum. Add roasting juices. Season with Allspice.
